When Pedestal Foods worked with longtime client Lindenwood University to revamp its Evans Dining Hall, we were excited to rethink more than just its physical space. One of the highlights of the renovation was less drywall and decor, and more cabbage and crunch.
Our renovations were based on student feedback and included a welcoming community atmosphere and “all you can eat” pricing that makes it easy and fun to sample different dishes at multiple stations. We also had the chance to bring back some favorite menu items, like the Good Livin’ Salad Bar, and try new ideas and recipes that keep students and staff coming back for more.
One of Evans Dining Hall’s most popular destinations is our new Smokehouse BBQ station, featuring house-smoked meats each day. And what goes better with BBQ than tangy, crunchy coleslaw?

Smokehouse Slaw
Serves 4-6
For convenience and ease, we recommend using a bagged slaw mix. Our Pedestal Foods team uses one full of nutrient-rich power veggies like kohlrabi, kale, broccoli, carrots, and cabbage.
- 1lb Bagged Slaw Mix
- 1 ⅔ Cup Apple Cider VinegarVinegear
- 1.5 Tsp Salad Oil
- 2 Tbsp Water
- 2/3 Cup Sugar
- 1.5 Tsp Kosher Salt
- 1.5 Tsp Onion Powder
- 1/2 Tsp Garlic Powder
- ¼ Tsp Celery Salt
- ¼ Tsp Celery Seed
- ¼ Tsp Ground Black Pepper
Mix all ingredients and toss with slaw mix.
Serve with your favorite BBQ, sandwiches, burgers, and more!
