As District Manager for Pedestal Foods®, Gustavo Dipolito is responsible for a rapidly growing client list of bustling K-12 kitchens and college cafeterias in the Midwest and Southeast. To him, leading is about much more than staff supervision and strategic planning. It’s about relationships. No matter how much is on his plate, Gustavo always puts people before profit.
“My job is all about connections—it’s my passion,” he says. “Whether I’m talking to a school administrator, a kitchen manager or a line cook, my goal is always the same: to create and maintain exceptional relationships. If I can support my team well, they can concentrate on the important work of making sure their environments are happy, healthy and thriving.”
Gustavo should know all about exceptional environments, after two decades in the food and hospitality industries. For several of those years, he was the fine dining Assistant General Manager at Fontainebleau Hotel & Resort in Miami–the largest five-star resort on the East Coast. And prior to landing at Pedestal Foods, he was General Manager for the luxury airline brand Emirates Group.
A man of many talents, Gustavo is also a certified wine sommelier and a former professional rugby player. He even played in two Rugby World Cup championships for his native country Uruguay. While he’s still an avid sports-lover, Gustavo now lives a quieter life with his wife and two kids in the Nashville area. His family, he says, is his greatest achievement.
